When I was a little girl, an elderly lady named Mabel would fix these potatoes when we would go over to her house to visit. They had acres of potatoes they would plant and this would be her method of using up the small new potatoes that would normally be left in the field. Of course I didn’t have any new potatoes to work with , but the small red potatoes you find in the supermarket work just as well.
Mabel’s Potatoes
12 small potatoes
1/2 c. flour
seasonings to taste (I used seasoning salt and parsley, but can add garlic powder, etc.)
lard/oil
Boil potatoes till the skin just starts splitting. About 10 minutes or so. The potatoes do not need to be cooked thoroughly in the boil.
Take from the stove, drain and cool in cold water.
Gently peel the skin of the potatoes off.
Mix the flour and seasonings and roll the potatoes one by one very gently.
Heat 2 inches of oil in a pot to deep frying stage (325 degrees).
Drop the potatoes in very gently, I set mine on a spoon and lower them in.
When one side is browned, turn to the other side.
Drain on towel and serve warm.
These go wonderful with Cheeseburgers, Sloppy Joes, etc. I show mine served with Ranch Dressing.

[...] Mabels Potatoes – These seem very interesting to me: fried potatoes that are not french fries. These small potatoes are boiled first, then rolled in seasonings and deep fried. They look appealing, but I’m curious to try them and see if they are as flavorful as I hope. [...]

I’m so happy to see you’ve added a little lard to make this potatoes! I just did a post about using lard after reading so many posts about how gross lard is. It’s not gross at ALL! You can find my post on lard at http://goodfoodweek.blogspot.com/2011/03/everything-in-moderation.html

Whenever I am in a BIG hurry to have a yummy side for brunch I substitute a can of whole little white potatoes and do the same thing. You just have to dry them off well. Not quite as fab as fresh but will do in a pinch!
Well done you!
